Recipe video: How to make Pita Bread

Remember this? [1] A lot of people wrote in and oohed and aahed at the possibility of making pita bread at home. And because my determination to demystify bread making has taken over everything else in our lives, I thought it’d be a good idea to put up a video. I’ve used the same recipe that I posted earlier.

You will be surprised to see how simple it is, and how strikingly similar to making phulkas. The actual baking time is just about 5 minutes in a 200 to 220 degree centigrade oven (depending on size) and you’ll be a star host if you make the dough beforehand and bake the pitas just minutes before your dinner party. Serve the warm pitas with hummus [1], falafel, tahini, and general other pita embellishments or, if you’re like me and can’t wait to get any other stuff ready, dunk them in a simple dressing of natural yogurt, minced garlic, salt, red chili powder, and extra virgin olive oil.

About the flour–simple all-purpose flour works best. As do bread flour of all kinds. If you’re in India and want to make a wholewheat pita, I recommend using some minimum amount of all purpose flour along with the atta just to get the gluten going. Or, use a little gluten (available at baking supplies stores) in the atta to make it light.
