Every year, when the first tart green raw mangoes make their appearance in the market, I start planning the dishes I want to make. I go through a zillion chutneys, pickles, curries, desserts, and god knows many boxfuls of mangoes eaten just like that–Alphonso mangoes in rich creamy desserts or just cut up and eaten plain, Paayri mangoes made into Aamras with a little milk and salt (and eaten with hot phulkas slathered with ghee), Langda and Dussehri mangoes eaten at the end of the season, and tiny Raiwal mangoes made into curry or just softened and sucked up on a hot afternoon.

More often than not, I am too greedy and busy myself in relishing the mangoes in their various avatars and end up not taking pictures for the blog. I hope to change that this year.
